For those who are fans of the show Friends you are probably chuckling right now because Ross is crazy and hilarious.  I was basically just as enthused as Ross was about these chicken skillet fajitas because let me tell you…they were YUMMY!  The recipe is really easy to follow and you guessed it, healthy 🙂  It made multiple meals for me throughout the week and tasted delicious every. single. time.  I highly encourage you give this one a try!!


For Chicken-

1 lb Thinly Sliced Chicken Breasts

2 T Fresh Parsley

2 t Olive Oil

2 t Dried Oregano

1 t Chili Powder

1 t Salt

1/2 t Garlic Powder

1/2 t Ground Cumin

Juice of Half a Lime

For Peppers & Onions-

2 t Olive Oil

2 Thinly Sliced Bell Peppers (your color of choice)

1/2 Thinly Sliced Onion

1 t Chili Powder

1/2 t Salt



  1. Combine all ingredients for the chicken in a bowl except for the lime juice and olive oil.
  2. Cut up the chicken into smaller pieces and toss in the mixture until coated.  Place the chicken on a plate, cover, and refrigerate for 15-30 minutes.
  3. Add 2 t of olive oil into a large skillet and let it heat.  When the skillet is hot add the cut up peppers, onions, chili powder, and salt and sauté for about 4 minutes or until soft and golden.
  4. Remove the peppers and onions from the skillet and set aside on a plate.
  5. Add 2 t of olive oil into the large skillet and add the chicken.  Cook until the chicken is done and no pink is visible.
  6. Add the peppers and onions back into the skillet with the chicken and add the lime juice from half of a lime.
  7. Cook everything all together for one minute and enjoy 🙂
  8. Fajitas can be served on tortillas, lettuce wraps, or just on top of a salad.  I added some plain Greek yogurt and spinach to my Ezekiel Sprouted Whole Grain Tortillas for a healthy, balanced meal!
