Due to the recent change in weather I have really been craving some comforting, hot soup.  So what did I do?  I made some DELICIOUS healthy chicken tortilla soup.  And ohmygoodness.. it was seriously everything I dreamed and more.  Not to mention it was SO easy to make because the crock pot is one of the BEST inventions in the entire world!!  All you have to do is throw some ingredients in and let it cook all day.  Then you get to come home to a warm dinner already prepared for you to dig in 🙂  I highly recommend this recipe to anyone who is in the fall spirit and has a jam packed schedule!!

Ingredients:

28 oz Crushed Tomatoes

3 c Chicken Stock

16 oz Kidney Beans, drained

16 oz Black Beans, drained

2 Cobs of Corn

1 lb Boneless Skinless Raw Chicken Breast

Homemade Taco Seasoning:

1 T Chili Powder

1 ½ t Cumin

1 ½ t Paprika

1 t Salt

½ t Garlic Powder

½ t Onion Powder

½ t Cayenne Pepper

Directions:

  1. Mix all the ingredients together and cook on low for 5 hours.
  2. At the end of the cooking time, remove chicken, shred with a fork, and return it to the soup.
  3. Enjoy a delicious bowl of hot soup full of flavor 🙂 I topped mine with a little grated Colby Jack cheese and some plain Greek yogurt (healthy alternative to sour cream)
