Mhmm yes I made some homemade snickers this past weekend.  Raw, vegan, gluten free, and refined sugar free snickers.  Now you may be reading that thinking.. yeahhhh that does not sound like my thing but y’all.. THEY WERE SO GOOD!  Seriously highly recommend you making them for a sweet treat.  They’re made with all whole foods and minimally processed foods.  They’re honestly super simple so give it a try!

There are three layers to these snickers so start with the base and work your way up!

Ingredients:

Base layer:

1 1/2 c Cashews

1/2 c Shredded Coconut

8 Pitted Medjool Dates

3 Tbsp Brown Rice Syrup

Middle Peanut Butter Carmel Layer:

8 Pitted Medjool Dates

1/4 c Peanut Butter

3 Tbsp Cashew Milk

1 Tbsp Brown Rice Syrup

Top Layer:

1/4 c Peanuts

1/2 Raw Chocolate Bar

1/4 c Shredded Coconut

Instructions:

Base Layer:

  1. Use a food processor to grind up the cashews into small pieces.
  2. Then add in coconut, dates, and brown rice syrup.
  3. Grind until the ingredients create a sticky consistency and cover & press the bottom of a loaf or cake pan lined with parchment paper.
  4. Place in freezer.

Middle Peanut Butter Carmel Layer:

  1. Grind all the ingredients into the food processor and slowly add milk.
  2.  Spread the carmel sauce over the base layer and place back in the freezer.

Top Layer:

  1. Press the peanuts into the carmel layer.
  2. Melt the raw chocolate in the microwave in 15 second increments and pour over the top.
  3. Sprinkle coconut on top.
  4. Place in freezer until hardened.

 

Cut up into bars and enjoy! 🙂
